Config Help: 2700x with GTX1080ti

Can i get some help tuning my new FSX rig please.
I thought with my hardware i would be able to max everything, but apparently not... :|
I'm getting some a strange intermittent CPU surge to 100% across all cores, that drops FPS form 40's to 20's breifly. See attached image.
I notice some jitter at low altitude when looking at houses immediately to my left or right in Vive.
Have also attached my FSX settings for reference.

I cant believe after all these years FSX is still mainly using a single core!?
Are 2700x users disabling SMT (hyper threading)?
I have stock cooler, so i dont think i should overclock CPU
but I was considering overclocking RAM, changing the timings. Worth it?

my CFG file is untouched.
Are old tricks like "affinity mask" etc are still relevant/useful?
what affinity mask do you recommend setting for the Ryzen 7 2700x? (8 cores, 16 threads)
Also, I wasnt sure which .CFG i should modify? (fsx.cfg, fsx_se.cfg, and fsx_se_FlyInside.cfg)
Any other hacks, tweeks recommended?

Windows 10 64bit
Fresh install of Steam FSX + orbx Australia + flyinside.
CPU: Ryzen 7 2700x
GPU: GTX 1080 ti (11GB)
RAM: 16GB 2666Mhz (2x8Gb dual channel)
Motherboard: Asus TUF x470
SSD: 970 EVO NVMe M.2
HTC Vive

FSX is super old now and yes it doesn't utilise the cpu or gpu hence 64 bit p3d. The tweaking for fsx is endless with a million and one tips and hints. Have you given our new sim a try? Very friendly on cpu and GPU and designed from the ground up for VR. As for fsx try looking on Google for the usual tips plus you could also give process lasso a try ?

True. Thats actually kinda the problem.
Its hard to know if "googled" tip is for FSX original or steam version, & if found tip is good with Flyinside config. Not to mention the newer hardware/OS.

Im guessing fsx_se_FlyInside.cfg overrides the others cfg files?

After reading Orbx documentation ive already increased mesh "mesh resolution" to 10, none of the files are 1m anyway.

Not yet. It sounds good.
Problem is, I actually purchased "Flyinside" about 1.5 years ago + i've spent money orbx map improvement, so i kinda feel financially financially committed/trapped to FSX investment.

In all honesty I would agree with Tony. Ditch fsx as fast as you can. You are using a fraction of your computers performance with such an old piece of software.
