Does the sim have night and day cycle, as in can you take off in the daylight and fly for a while then land in the dark?

Does no one actually know this. It's amazing that you can change the time of day on the 'fly' as it were, but I cant work out whether time passes as I only have 7 minutes in the demo.

Yes, time does pass as the sim runs. If you keep the "Date and Time" window open, you should see it advance a few minutes over the course of the demo.
